小麦貯藏的安全与否,和小麦本身含水量有着密切关系。所以,各地粮食采储机关,对小麦入仓前的水分检查,都很重视。目前,因受人员、化验仪器和地域的限制,对入仓的小麦水分主要还是凭感官鑑定。由于小麦成熟的生物学特性、理化特性和气候条件不同,便影响到麦粒含水量的不一致,也会使鑑定的结果发生误差。所以,了解小麦成熟特征和含水量的变化,对于安全貯藏有一定的意义。
