森林蔬菜亦称山野菜,是目前风行世界的五类健康食品之一。森林蔬菜生长在自然状态下的林间、山野、溪边,具有鲜嫩、清醇、芳香、无污染等特点,是难得的绿色食品。森林蔬菜的营养成分大多高于人工栽培的蔬菜,尤其是维生素和无机盐含量方面最为突出。不少野菜含有多种氨基酸,如苦菜中含有17种氨基酸,其中8种是人体必需的。这是其它栽培蔬菜所不及的。 我国森林蔬菜资源丰富、种类多、分布广。按其食用部位可分为叶菜、茎菜、根菜、果菜、花菜、菌菜等类。森林蔬菜种类纷呈,食法多样。既作主料,又可作配料,炒、煮、拌、烧皆可成为可口的“野味”。家常菜谱中的“荠菜炒鸡
Forest vegetables, also known as wild vegetables, is currently one of the five popular health food in the world.
