据美国《华盛顿邮报》报道,美国俄亥俄州大学近期研究证明,一些红蓝色水果和菜蔬不仅有益健康,还具有较好的防癌效用。研究人员从一些红色、蓝色或紫色水果菜蔬中提取出一种天然色素:花青素。他们把花青素装入有大肠癌细胞的长颈瓶中,发现花青素能够抑制癌细胞的生长,并杀死了其中20%的癌细胞。其实红蓝色的果蔬不单单有抗癌效用,还含有丰富的抗氧化物质、维生素、矿物质等等,具有明显的抗衰老和保健效用。不少人都懂得,人在吸入氧气呼出二氧化碳的新陈代谢中,会产生许多多余的自由基,这些自由基具有很强的攻击性,患病时它可能攻击病灶;平素也可能攻击人体的某一器官或者部位,使人加快衰老或者患病。而红蓝果蔬中含有较多的茄红素、β-胡萝卜素、椒红素和维生素C等,它们都有较强的抗氧化效用,阻止多余的自由基的产生。除了抗癌、抗衰老以外,这些物质还会起到预防高血压、动脉硬化、糖尿病、消弭疲劳、提高肝脏功能,在一定程度上有减肥、美化皮肤等效用。下面就简单介绍一下这些红蓝果蔬。
