本文通过对《红楼梦》中传统点心的研究现状的分析,整理归纳《红楼梦》中提及到的点心的种类、特点以及失传和延续的点心,通过在南京地区开展田野调查,分析传承下来的点心的共性与优势特点,找出失传点心的问题和应对策略,一方面为烹饪院校点心教学提供理论依据,另一方面为餐饮从业者提供点心改良与创新奠定基础,使得《红楼梦》传统美食得到进一步的传承与发展。
By analyzing the current research status of traditional dim sum in A Dream of Red Mansions, this article summarizes the types and characteristics of dim sum mentioned in “A Dream of Red Mansions”, and the lost and extended dim sum.
