在我国酿酒工业中,果酒和露酒的产量相当低,而且近年来果露酒的产量占饮料酒总产量的比重正在逐年下降。果酒、露酒与其它酒类比较有其独特的优点。果酒原料来源广阔,营养丰富,酒精含量低,节约粮食,不争耕地,比粮食酒税率低;露酒的物质基础雄厚,可以充分利用各种动、植物作为资源,规格和品种丰富多采,工艺和设备较简单,功能特殊。应该说果露酒生产与发展完全符合“四个转变”和“优质、低耗、多品种”的酿酒工业发展方针。在目前我国宏观经济稳中向好的良好环境中,如何使果露酒摆脱困境,走向美好的未来,今特提出几个问题,供大家研究。
