果蔬的辐照，就是用一定剂量的Ｃｏ６０ｒ射线对水蔬菜进行处理，从而达到保鲜延贮的目的。与其他贮藏方法相比较，辐照技术处理作用效果好，卫生安全．加工程序简便，节能降耗，无污染，具有显著的经济效益和社会效益。该技术目前已开始进入商业化生产阶段，并具有广泛的应用前景
