钙是人体内极其重要的组成元素。人体骨骼组织缺钙会引起软骨病。测定食品中的钙具有非常重要的营养学意义。测定方法通常使用高锰酸钾滴定法,EDTA滴定法和原子吸收或火焰光度法等等。但是,这些方法都需要把样品灰化,用酸溶解,然后才能测定,操作复杂,速度慢。对于易变质的牛奶样品,很难用于常规分析。若用离子选择电极测定牛奶中的钙,可不必灰化,奶样稀释后即可测定,方法简便,快速。本文介绍用钙离子选择电极测定牛奶中钙的方法。
Calcium is an extremely important element in the body. Calcium deficiency can cause osteochondrosis in human skeletal tissue. Determination of calcium in food has a very important nutritional significance. Determination methods commonly used potassium permanganate titration, EDTA titration and atomic absorption or flame photometry and so on. However, these methods all require ashing of the sample, dissolving it with acid before it can be measured, the operation is complicated and the speed is slow. For perishable milk samples, it is difficult to use for routine analysis. If the use of ion-selective electrode determination of calcium in milk, may not be ashed, diluted milk can be measured, the method is simple and fast. This article describes the use of calcium ion selective electrode method for the determination of calcium in milk.
