目的检测制作鱿鱼、海参、鲜奶等食品时是否违法使用工业火碱。方法利用差示扫描量热法测定鱿鱼、海参中非法添加工业火碱可能引起的蛋白质变性,用原子吸收光谱法测定鱿鱼、海参和鲜奶中非法添加工业火碱可能引起的重金属元素含量的变化。结果添加工业火碱会引起该类食品蛋白质变性和Pb、As、Hg等重金属含量的升高。结论差示扫描量热法和原子吸收光谱法均可辅助用于检测该类食品是否添加工业火碱。
Objective To detect the use of industrial caustic soda when making squid, sea cucumber, milk and other foods. Methods Differential scanning calorimetry (DSC) was used to determine the possible protein denaturation of squids and sea cucumbers by adding industrial caustic soda. The changes of heavy metal elements in squids, sea cucumbers and fresh milk illegally added by industrial caustic soda were determined by atomic absorption spectrometry . The results of industrial caustic soda will cause such proteins denaturation and Pb, As, Hg and other heavy metal content increased. Conclusion Differential scanning calorimetry and atomic absorption spectrometry can be used to assist in the detection of such food whether to add industrial caustic soda.
