蜡样芽胞杆菌为条件致病菌,广泛分布于自然界,存在于土壤、污水及尘埃中。食品在加工、运输、贮藏、销售的各个环节均易受到污染。一般认为,当食品中污染的蜡样芽胞杆菌>10~5/g时,可能引起食物中毒;10~7/g以上可作为引起食物中毒的标志。1996年5月18日发生了一起由食用馒头而引起的食物中毒。通过流行病学调查、实验室检验,认为该起食物中毒由蜡样芽胞杆菌所致。
Bacillus cereus is a pathogenic bacteria, widely distributed in nature, exist in soil, sewage and dust. Food in processing, transportation, storage, sales of all links are vulnerable to pollution. Generally believed that when food contaminated Bacillus cereus> 10 ~ 5 / g, it may cause food poisoning; 10 ~ 7 / g or more can be used as a sign of food poisoning.
