高校食堂营养卫生管理措施研究

目的评价对高校食堂进行干预措施后的效果,在管理高校食堂中遇到问题以及相应管理措施的研究。方法对学校食堂检查2013年1—12月是干预前,作为对照组;2014年1—12月是干预后,作为观察组,采用现场试验的方法,记录检查范围内出现的问题;对在校进餐师生进行食堂卫生安全的调查问卷。结果通过行政干预后观察组的检测食具环节细菌总数合格率升高了17.23%,大肠菌群合格率升高了16.39%;食堂干预前后,在校进餐的学校对食堂的满意度明显提高。结论对食堂进行行政性干预后,高校食堂在采样环节在细菌总数合格率以及大肠菌群均有所提高,学生在调查问卷中对食堂卫生安全满意度提高,说行政干预直接对提高高校食堂卫生安全和提升师生对食堂满意度很有效果,值得推广。 Objective To evaluate the effect of intervention measures on the college canteens, the problems encountered in the management of canteens and the corresponding management measures. Methods The school cafeteria examination from January to December in 2013 was taken as the control group before the intervention. After the intervention from January to December in 2014, the field test was used as the observation group to record the problems in the inspection range. Results After the intervention by the administrative group, the qualified rate of the bacteria in the test utensil link increased by 17.23% and the pass rate of the coliform increased by 16.39%. Satisfaction of the canteens in the school was obviously improved before and after the canteen intervention. Conclusion After the administrative intervention in the cafeteria, the passing rate of the bacteria in the university canteens and the number of coliforms increased in the sampling period. Students’ satisfaction with the hygiene and safety of the canteens in the questionnaire was improved. Administrative intervention directly improved the health of the canteens Safety and enhance the satisfaction of teachers and students on the canteen very effective, it is worth promoting.
