动物源性食品中性激素残留问题已成为人们关注的焦点,据报道食用含有性激素残留的动物源性食品可能导致男性女性化、影响生殖健康或有致癌作用等。欧盟已于1988年禁止六种激素用于食源性动物,但残留问题依然存在,且含量较低,因此开发具有灵敏度高、检出限低的性激素残留确证分析技术,对保证食品安全具有重要意义。本文总结了国内外对动物源食品中性激素残留的规定以及各类动物源食品(可食部分)中性激素残留情况,重点介绍了目前国内外对动物源食品中性激素的残留检测方法研究进展,包括样品提取和各种净化方法 ,并对前景进行了展望。
It has been reported that the problem of the release of sex hormones from animal-derived foods has become the focus of attention. It has been reported that the consumption of animal-derived foods containing sex hormones may lead to feminization of men and affect reproductive health or carcinogenicity. The EU banned six hormones in 1988 for food-borne animals, but the residual problem still exists and the content is low. Therefore, the development of high-sensitivity and low-detection limit confirmatory analysis of sex hormone residues is very important for food safety significance. This article summarizes the domestic and foreign regulations on the sex hormones residues in animal-derived foods and the neutral hormone residues in various animal-derived foods (edible parts), and highlights the current research progress on the detection of the sex hormones in animal-derived foods at home and abroad, including Sample extraction and various purification methods, and prospects for the future.
