乳品质量安全是大家广泛关注的问题,乳品质量安全在加工过程中比较容易控制,而奶源质量的控制却较为复杂(主要表现在奶牛散养户难以控制奶源质量,存在药物残留以及饲料的安全问题),并且不少企业为了争夺奶源,经常放松对原料奶质量和安全的控制。因此,原料奶的质量和安全成为影响乳品质量安全的关键所在,奶源数量和质量已成为制约乳品企业发展的共同难题。2008年“三聚氰胺”事件后,奶源问题更成为行业和社会关注的焦点。如今,已有越来越多的乳品企业认识到这一问题,并开始加大奶源基地建设,如新希望、贝因美、恒天然、蒙牛、伊利等。
