目的了解食品中金属污染及变化趋势,为制定合理有效的预防控制措施提供科学依据。方法按照《2013-2014年湖北省食品安全风险监测方案》要求,随机抽取荆州市17大类食品共691份样品进行铅、镉、总汞和铝的检测,并对监测结果进行统计分析。结果 2013-2014年监测691份样品,铝、铅、镉和总汞的检出率分别为99.0%、82.31%、75.04%和42.81%。合格率分别为100%、95.26%、99.37%和98.42%。结论 2013-2014年荆州市售食品中金属污染状况总体不严重,不同食品受金属污染程度不同,对超标严重的蔬菜类、甲壳类、禽内脏等食品要采取相应的监管措施,加强监督管理,确保市民吃到安全的食品。
Objective To understand the metal contamination in food and its changing trend, and to provide a scientific basis for making reasonable and effective preventive and control measures. Methods According to the requirements of “2013-2014 food safety risk monitoring program in Hubei Province”, a total of 691 samples from 17 categories of foodstuffs in Jingzhou city were randomly selected for the determination of lead, cadmium, total mercury and aluminum, and statistical analysis of the monitoring results was carried out. Results The detection rates of 691 samples from 2013 to 2014 were 99.0%, 82.31%, 75.04% and 42.81% respectively for aluminum, lead, cadmium and total mercury. The pass rates were 100%, 95.26%, 99.37% and 98.42% respectively. Conclusion In 2013-2014, the status of metal pollution in Jingzhou’s commercial food was not serious. Different foods were contaminated by metals. Corresponding supervisory measures should be taken to those vegetables which exceed the standard, such as vegetables, crustaceans and poultry offal, so as to strengthen supervision and management, Make sure people eat safe food.
