目的了解沈阳市各类食品中主要的食源性致病菌污染情况及其变化趋势,为食品安全风险评估及预警提供依据。方法依据2011-2014年《国家食源性致病菌监测工作手册》要求,随机抽取15类、970份样品进行食源性致病菌的监测。结果在监测的970份样品中,检出食源性致病菌株93株、总检出率为9.6%;副溶血性弧菌检出率最高,为11.3%;熟肉制品类食品致病菌检出率最高,为21.8%。采自农贸市场食品致病菌检出率最高,为14%;散装食品检出率最高为14.9%。结论沈阳市市售的食品存在食源性致病菌的污染,主要致病菌为副溶血性弧菌和蜡样芽胞杆菌。熟肉制品、动物性水产及其制品是高风险食品;农贸市场及网店出售的食品致病菌污染较严重;散装食品安全风险高。应加强对重点致病菌、重点时段、重点食品、重点食品消费场所的监测与监管,控制食源性疾病的发生。 Objective To understand the main food-borne pathogenic bacteria in Shenyang City and the trend of its change, and provide basis for food safety risk assessment and early warning. Methods According to the “2011-2014 Manual of Foodborne Pathogenic Bacteria Surveillance”, 15 types and 970 samples were randomly selected for the surveillance of food-borne pathogens. Results Among the 970 samples monitored, 93 strains of food-borne pathogens were detected, with a total detection rate of 9.6%. The highest detection rate of Vibrio parahaemolyticus was 11.3% The highest detection rate was 21.8%. The highest detection rate of foodborne pathogens collected from farmers’ markets was 14%; the highest detection rate of bulk foods was 14.9%. Conclusion There are food-borne pathogens in the foodstuffs in Shenyang City. The main pathogens are Vibrio parahaemolyticus and Bacillus cereus. Cooked meat products, animal aquatic products and their products are high-risk foods; farmer’s markets and online shop selling food-borne pathogens more seriously; and the risks of bulk food safety are high. Should focus on pathogenic bacteria, key period, key foods, key food consumption places of monitoring and regulation, control of food-borne diseases.
