目的了解四川省食品中的食品添加剂使用情况。方法 2014年在四川省21个监测点采集了4大类1 122份食品样品,按照国家标准方法,进行防腐剂、着色剂、护色剂和甜味剂的检测。结果熟肉制品中硝酸钠和亚硝酸钠的超标率分别为0.51%、5.08%;流动街头餐饮的肉制品亚硝酸钠超标率3.06%;流动街头餐饮米面制品(除油炸面制品、面糊、裹粉、煎炸粉外)中铝的残留检出率为71.97%;着色剂在葡萄酒和果酒、玉米粉、小米及小米粉以及街头流动餐饮的肉制品中有检出;甜味剂在葡萄酒和果酒中有检出。结论四川省食品中食品添加剂存在超标与超范围使用的问题,应加强监管,保障消费者健康,确保食品安全。
