目的了解重庆市不同类别食物中食源性致病菌污染情况,为食品安全风险评估提供科学依据。方法按GB 4789和GB 8537规定方法进行检验和评价。结果 2013—2014年食品样品共计1 825份,检出食源性致病菌197株,检出率为10.79%。除副溶血性弧菌外,其余7种致病菌均为阳性。结论重庆市的市售食品存在一定食源性致病菌污染风险,其中蜡样芽孢杆菌、金黄色葡萄球菌和铜绿假单胞菌的检出率较高,分别为2.14%,2.47%和2.68%,应建立市售食品致病菌持续监测机制。
Objective To understand the contamination of food-borne pathogens in different types of food in Chongqing and to provide a scientific basis for food safety risk assessment. Methods According to GB 4789 and GB 8537 regulations for testing and evaluation methods. Results A total of 1 825 food samples were collected during 2013-2014. 197 food-borne pathogens were detected, with a detection rate of 10.79%. In addition to Vibrio parahaemolyticus, the remaining seven kinds of pathogens are positive. Conclusion There is a certain risk of food-borne pathogens contamination in the commercially available foods in Chongqing. Among them, the detection rates of Bacillus cereus, Staphylococcus aureus and Pseudomonas aeruginosa are 2.14%, 2.47% and 2.68 %, Should establish a commercially available food pathogens continuous monitoring mechanism.
