OBJECTIVE: To analyze and compare the volatile components of acute pendant and fried products, and lay the foundation for the follow-up pharmacological activity. At the same time, the impact of processing on the composition and content of volatile components in acute subelements was investigated in order to provide a scientific basis for the clinical application of acute sub-herbs. Methods: The chemical constituents of the volatile components in the peanut and fried products were extracted and identified by headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS) Method to calculate the content of each component. Results: A total of 49 chemical constituents were identified, mainly aldehydes, alcohols and terpenoids. Thirty-seven chromatographic peaks were isolated from the volatile compounds of acute pests. Thirty chemical constituents were identified, accounting for 85.5% of the total volatile components. Thirty chromatographic peaks were separated from the volatile compounds of the acute specie and identified 24 Chemical composition, accounting for 90.57% of the total volatile components. Conclusions: The composition and content of volatile components in acute and pre-fry sub-frying vary greatly. After frying, acute excipients have higher application value in flavors and flavors and food industry, however, the pharmacological action of acute exon did not change much before and after frying. This study provides a material basis for the further study of the pharmacological effects of each component before and after the acute sub-frying and its mechanism of action, and provides a reference for clinical application of acute subtilis.
