目的掌握兖矿集团矿区餐饮单位食(饮)具消毒状况,杜绝传染病以食饮具为媒介传播,保障职工集体用餐的安全。方法根据GB14934-94《食(饮)具消毒卫生标准》评价检测结果,对2008-2011年兖矿集团矿区餐饮单位的食(饮)具消毒情况进行统计分析。结果 2008-2011年兖矿集团食(饮)具大肠菌群指标检测合格率分别为85.33%、89.71%、95.91%、96.29%。其中大型洗碗机消毒效果最好,不同规模餐饮单位、不同类别、不同消毒方式食(饮)具合格率差异均有统计学意义。2011年1-4季度食(饮)具大肠菌群检测合格率分别为99.70%、93.61%、92.42%和96.29%。对食(饮)具大肠菌群检测方法纸片法和发酵法进行比较,大肠菌量<1 cfu/ml时两方法结果差异有统计学意义(P<0.01)。结论 2008-2011年兖矿集团矿区食(饮)具大肠菌群指标检测总的合格率逐年提高,但夏季要防止食(饮)具的二次污染,消毒工作还要增加监督监测频次。
Objective To master the disinfection status of food (drink) in catering units of Yankuang Mining Area and prevent the spread of infectious diseases by using food and beverage as media to ensure the safety of employees’ collective dining. Methods According to the test results of GB14934-94 “food (drink) with disinfection health standards”, the statistical analysis of food (drink) disinfection of catering units in Yankuang Group from 2008 to 2011 was conducted. Results The passing rate of coliform bacteria index of Yankuang Group from 2008 to 2011 was 85.33%, 89.71%, 95.91% and 96.29% respectively. Among them, the disinfection effect of large-sized dishwashers is the best, and there are significant differences in the passing rate of food (drink) with different types of catering units, different types and different disinfection methods. In the first three quarters of 2011, the passing rates of food, drink and coliform detection were 99.70%, 93.61%, 92.42% and 96.29% respectively. The food (drink) with coliform bacteria detection method paper method and fermentation method were compared, coliform bacteria <1 cfu / ml when the results of two methods were statistically significant (P <0.01). Conclusion The total qualified rate of food, drink and drinking water in Yankuang Mining Area increased from 2008 to 2011, but the secondary pollution of food and drink should be prevented in summer and the frequency of supervision and monitoring should be increased.
