目的了解温岭市现榨饮料的加工现状,以探索有效监管对策。方法抽查42家不同类型的餐馆进行卫生学调查及样品检测。结果加工过程中存在不卫生问题,如现榨专间配备率只有28.6%,榨汁机使用前消毒率只有9.5%,现榨饮料微生物指标检测总合格率为30.9%,其中中小型餐饮单位的合格率为13.2%,现榨果蔬汁的合格率只有12.2%等。结论现榨饮料加工过程存在严重污染,其卫生状况堪忧,食品卫生监督管理部门需加强对餐饮企业的监管。
Objective To understand the processing status of squeezed beverages in Wenling City to explore effective regulatory measures. Methods 42 different types of restaurants were randomly selected for hygiene investigation and sample testing. Results There were unsanitary problems during the processing. For example, only 28.6% of specialized equipment was squeezed out, the disinfection rate of juicer before use was only 9.5%, and the total qualified rate of microbial indicators of squeezed beverages was 30.9%. Among them, the medium and small-sized catering units The pass rate of 13.2%, squeezed fruit and vegetable juice is only passing rate of 12.2% and so on. Conclusion The process of squeezing beverages is seriously polluted and its sanitation status is worrying. The food hygiene supervision and administration department needs to strengthen the supervision of catering enterprises.
