乳制品是高营养食品,不仅含有丰富的脂肪、蛋白质和碳水化合物,而且含有人体必需的维生素和微量元素。但是,乳制品产业链长,饲料种植施用的农药经迁移转化后进入生乳,再经加工进入乳制品,由于饲料品种多,施用的农药品种更多,最后进入乳与乳制品中仍有相当数量的品种。国标GB2763-2005《食品中农药最大残留限量》中规定了136种农药残留限量,但只有六六六、滴滴涕、林丹三种,对乳与乳制品进行了限量规定,其它农残均未见规定。乳与乳制品中农药残留的底数不清,潜在的危害和风险依然存在。现根据国标GB2763-2005《食品中农药最大残留限量》,对乳与乳制品中有可能存在农药残留进行分析。
