为了解长臀鮠的营养价值,对其肌肉脂肪酸的组成成分进行了分析。结果表明:长臀鮠肌肉中含有11种脂肪酸,其中,饱和脂肪酸4种,不饱和脂肪酸7种。饱和脂肪酸的质量分数占脂肪酸总质量分数的33.96%,不饱和脂肪酸的质量分数占脂肪酸总质量分数的66.03%,其中,单不饱和脂肪酸的质量分数占脂肪酸总质量分数的50.49%,多不饱和脂肪酸的质量分数占脂肪酸总质量分数的15.54%。长臀鮠肌肉脂肪酸主要由C18:1、C16:0和C18:2n-6脂肪酸组成,这3种脂肪酸质量分数总和占脂肪酸总质量分数的80.44%,C18和C16脂肪酸含量最高。长臀鮠肌肉脂肪酸种类组成与其他几种鱼类有明显差异。
To understand the nutritional value of long-tailed gourd, the composition of its muscle fatty acids were analyzed. The results showed that there were 11 kinds of fatty acids in the muscle of Long-hips, including 4 kinds of saturated fatty acids and 7 kinds of unsaturated fatty acids. The mass fraction of saturated fatty acids accounted for 33.96% of the total mass fraction of fatty acids, unsaturated fatty acids accounted for 66.03% of the total mass fraction of fatty acids, monounsaturated fatty acids accounted for 50.49% of the total mass fraction of fatty acids, polyunsaturated The mass fraction of fatty acids accounted for 15.54% of the total mass fraction of fatty acids. The muscle fatty acids of C. longissimus were mainly composed of C18: 1, C16: 0 and C18: 2n-6 fatty acids. The total contents of these three fatty acids accounted for 80.44% of the total fatty acids and C18 and C16 fatty acids were the highest. Long-hipped pomfret muscle fatty acid species composition and several other fish have significant differences.
