茶多酚中含量最高、生物学效应最强的是表没食子儿茶素没食子酸酯(EGCG)。其除了具有抗氧化、抗脂质过氧化、清除自由基、抗突变和抗肿瘤形成的作用外,对抗炎也有着很强的作用。研究发现EGCG在体内和体外通过抑制NF-κB活性及产生从而发挥抗炎作用;EGCG通过抑制IL-1β信号转导途径,抑制IL-1β分泌而抑制炎症反应;另外,EGCG可以通过TNF-α阻断IL-8释放,发挥潜在的抗炎和抗氧化作用;EGCG还可以通过减少iNOS基因表达和NO产生,减轻因NO过量产生而导致的炎症反应。
The highest content of tea polyphenols and the strongest biological effect is epigallocatechin gallate (EGCG). In addition to its anti-oxidant, anti-lipid peroxidation, free radical scavenging, anti-mutagenic and anti-tumor effects, it also has a strong role in fighting inflammation.
