芹菜药性最强的部分,是芹菜叶、芹菜根和靠近根部的老秆儿。可惜的是,我们平常吃的时候,往往把这些药性最好的部分给扔掉了芹菜有三种:西芹、药芹和香芹。西芹原来中国是没有的,是西洋品种的芹菜。西芹又粗又长,产量高,口感又脆嫩,这些年渐渐就成为市场主流了。西芹作为蔬菜食用是不错的,但药性比起中国本地品种的芹菜就要稍逊一筹了。药芹,其实就是以前人们最常吃的普通芹菜。这种芹菜是中国本地的传统品种,虽然它不如西芹那么脆嫩,药性却是最强的,所以被称为药芹。
