硫代巴比妥酸值(简称TBA值),用于定量丙二醛,是表示油脂酸败程度的指标之一。国外学者Tarladsis等人早于六十年代就提出了应用蒸馏法作丙二醛的定量测定。国内有的单位应用该法对猪油和肉制品曾作过丙二醛定量测定。近几年,又有不少单位对咸鱼制品以萃取其油脂(萃取法)或是直接取鱼肉(直接法)进行蒸馏,测定丙二醛,但对此尚有争议。本文对这两种方法进行了实验探讨,现将结果报告如下。
Thiobarbituric acid value (referred to as TBA value), for the quantitative determination of malondialdehyde, is one of the indicators of the extent of rancidity. As early as the 1960s, foreign scholar Tarladsis et al proposed the quantitative determination of malondialdehyde by distillation. Some domestic units to apply the law of lard and meat products have been made of malondialdehyde quantitative determination. In recent years, there are still many units on the salted fish products to extract their oil (extraction method) or directly take fish (direct method) for distillation, determination of malondialdehyde, but this is still controversial. This article has carried on the experiment discussion to these two kinds of methods, now report the result as follows.
