膳食调查中营养素与热能的计算,在营养缺乏病、临床营养、膳疗和营养调查中是至关重要的。了介个体和人群在一定时间内通过膳食所摄取的热能和各营养素的数量和质量,是膳食调查的目的,并以此评定各营养素需求被满足的程度。我国食物品种之多为世界瞩目。而膳食调查的人群多者可达上万,少者则以家庭或个人(包括病人)为对象。所以,膳食中各营养素数据的处理,工作复杂、计算繁琐;正确度变到一定限制。
The calculation of nutrients and calories in dietary surveys is crucial in nutritional deficiency, clinical nutrition, dietary and nutritional investigations. The purpose of the dietary investigation is to assess the amount of heat energy and the quantity and quality of various nutrients consumed by the individual and the population through a certain period of time, and to assess the degree to which each nutrient requirement is satisfied. China has a lot of food varieties for the world. The number of people in the dietary survey can reach tens of thousands, while the younger ones target families or individuals (including patients). Therefore, the processing of various nutrient data in the diet is complicated and the calculation is cumbersome; the accuracy is changed to a certain limit.
