甜菜块根收获后,由于等待加工制糖的原因,需要有一个贮存保藏期。在此期间,因为甜菜块根受到气候的变化,微生物的侵袭、繁殖以及自身维持生命活动的消耗,均会在不适应的管理条件下,发生不同程度的枯萎、冻化、腐烂和糖分转化的损失。甜菜块根的枯萎,不仅造成重量上的直接损失,同时还对其内部的碳水化合物变化有强烈的影响,也是引起酵素作用发生极大变动的原因。
