织蛋白的研制和试产,但利用花生蛋白生产植物肉的报导尚未见到。花生是一种含有高脂肪、高蛋白的植物油料,花生仁中不但含有38—51%的油,还含有25—30%的蛋白质,花生蛋白是公认的优质蛋白。目前我国生产的花生,大部分用来榨油,取油后的花生饼粕中的蛋白质含量高达45-56%,长期以来,花生饼粕一般都用做饲料或肥料。为了更好地开发利用花生蛋白资源,提高花生饼粕的使用价值,生产新型的高蛋白食品,山东省烟台地区粮食局和山东省栖霞植物蛋白厂共同承担了花生组织蛋白研究项目,先后进行了HDP—95型花生蛋白膨化机的试制和利用花生饼粕制取组织蛋白的工艺研究,于
