土炒淮山、土炒白术这二味中药,临床上常用于温中健脾止泻。翻阅中药炮制有关资料,对淮山、白术二味中药的土炒方法均为干法炒:即先把定量灶心土细粉置炒药锅内,文火加热,炒至土现轻松状态,再把药材饮片倒入,翻炒至饮片表面附有土色并透出药材固有的香气为度。我院多年来,对这二味中药则都采用另法炮制,今介绍如下。取净黄土(因灶心土难寻,用黄土代)晒干,研成细粉,过筛去除杂物。取净淮山片(白术同此)入清水,稍浸湿即捞起,置竹筛中沥干滴水,再倒入竹(竹匾)内,摊平。把定量黄土细粉分五次均匀复盖其上,拌匀,使饮片两面都均匀挂上黄土细粉,最后再摊平,晒干。晒干后,部分黄土细粉可能自饮片表面脱落,但无伤害。然后分次(每次炒时饮片量以1kg为宜)把经用黄土细粉处理过的饮片与脱落的黄土细粉部份一起置热锅中,用文火勤加搅拌,炒至淮山片表面呈微黄色并发出药材固有香气为度,出锅,筛去黄土细粉,摊晾凉,即得。
Soil fried yam, soil fried Atractylodes this two herbs, clinically used to warm the spleen and diarrhea. After reviewing the Chinese medicine concocted materials, the methods of soil frying for the two flavors of Chinese yam and Atractylodes are dry fried: the first step is to set the ration of powdered earth and ground fine powder in the frying pan, heat the simmer, and stir until the soil is in a relaxed state. The medicinal herb pieces are poured into the dish and stir-fry until the surface of the decoction piece is covered with earth and the degree of aroma inherent in the medicinal material is revealed. Over the years, our hospital has adopted another method for this two-flavored Chinese medicine. This is introduced as follows. Take the net loess (difficult to find because of stove hearth, use loess) sun dried, research into fine powder, sifting to remove debris. Take a net of yam yam (Atractylodes with this) into the water, soak it and pick it up, drain it with a bamboo sieve, and pour it into a bamboo (bamboo vine) and spread out. The quantitative loess fine powder is evenly covered on five occasions, and is mixed well, so that the pieces of the loaf are evenly hung on both sides of the loess fine powder, and then finally flattened and dried. After drying, some of the loess fines may come off the surface of the slice, but no damage is caused. Then divide the pieces (1kg is appropriate for each piece when fried) and put the pieces treated with the loess fine powder together with the fine part of the loosened loess together into a hot pot, stir gently with the fire, and stir until the surface of the yam slices. It is slightly yellow and emits the inherent aroma of medicinal herbs. The pan is removed and the fine powder of loess is sieved.
