食用百合是野生百合经过多年的良种驯化、品种筛选、以及人工栽培后,可供食用的、安全无毒的食品,是我国经济价值较高的上等蔬菜,具有较好地药用价值和保健功能。百合鳞片含有丰富的淀粉、蛋白质、脂肪、糖类、果胶质、维生素、胡萝卜素等,还含有钙、磷、锌、铁、硒等13种微量元素和18种氨基酸,具有润肺止咳、清心安神、养阴止血、补脾健胃、清热解毒等功效。据资料统计,百合包括栽培种和野生种全世界有100多种,产于我国的有39种,其中有10个品种可供食用;而目前栽培面积较大的品种主要有宜兴百合、龙牙百合、兰州百合、川百合四种。
