随着乳业的发展壮大,乳品市场竞争日益激烈,乳制品的质量安全成为消费者最关注的问题。原料奶作为乳制品产业链的最上游,其质量情况直接影响乳制品品质,因此提高原料奶的质量,从源头上保证原料奶的品质是中国乳业健康发展的重中之重。但是,从源头上提高原料奶的质量安全并非易事。原料奶的整个生产过程不仅涉及到奶牛的遗传育种、饲养管理等方面,而且受到生鲜乳收购环节的影响。通过分析影响原料奶质量的各种因素,提出提高原料奶品质的具体方法。
With the development and expansion of the dairy industry, the dairy market is becoming increasingly competitive. The quality and safety of dairy products has become a consumer concern. Raw milk as the most upstream of the dairy industry chain, the quality of its direct impact on the quality of dairy products, raw milk to improve the quality of raw milk from the source to ensure the quality of the healthy development of China’s top priority. However, improving the quality and safety of raw milk at the source is not easy. Raw milk throughout the production process involves not only genetic breeding of cows, feeding and management aspects, but also by the impact of fresh milk acquisition.
