大豆对硒具有较强的生物富集能力,通过大豆富硒,开发易被吸收利用的富硒食品,是满足人们补硒需求的有效途径。对于大豆硒的富集特征及其生物学效应方面的研究已有报道,结合前人研究成果,简述了大豆对硒的富集特征,分析了硒对大豆生长发育及产量与品质的影响,介绍了硒对大豆抗氧化及抵御不良环境等方面的作用,并对未来研究的方向进行了展望。
Soybeans have a strong bioconcentration capacity for selenium. Selenium-enriched soybeans can be used to develop selenium-enriched foods that are easily absorbed and utilized, which is an effective way to meet people’s needs for selenium supplement. The research on enrichment characteristics and biological effects of soybean selenium has been reported. Combined with previous research results, the characteristics of soybean enrichment of selenium were briefly described. The effects of selenium on growth and yield and quality of soybean were analyzed. The effects of selenium on soybean antioxidant activity and resistance to adverse environment were introduced, and the future research directions were prospected.
