1995年对济南市两个蔬菜市场48种蔬菜和肥料试验蔬菜样品测定硝酸盐含量,部分样品同时测含钾量,结果表明:(1)不同种类蔬菜硝酸盐含量差异很大,其中约10种蔬菜可食部分硝酸盐含量超过WHO/FAO1973对食品中硝酸盐的限量标准。(2)蔬菜硝酸盐含量与钾含量呈极显著指数负相关。(3)施钾肥能适当降低硝酸盐含量,而偏施氮肥相应提高硝酸盐含量。
In 1995, 48 vegetable and fertilizer vegetable samples were tested for nitrate content in two vegetable markets in Jinan City. Some samples were tested for potassium content at the same time. The results showed that: (1) There were great differences in nitrate content among different vegetables, of which about 10 The edible part of the vegetable nitrate content exceeds the WHO / FAO1973 limit value of nitrate in food. (2) There was a significant exponential negative correlation between nitrate content and potassium content in vegetables.
