豆腐是我国传统的绿色健康食品,具有风味独特,制作工艺简单食用方便等特点,现已有2100多年的历史,深受我国人民及世界人民的喜爱。豆腐除含有丰富的蛋白质、脂肪、碳水化合物、纤维素等营养成分外,还含有铁、钙、磷、镁等人体必需的多种微量元素,素有“植物肉”之美誉,是生熟皆可、老幼皆宜、养生摄生、益寿延年的美食佳品,并对高血压、高血脂、高胆固醇、冠心病、骨质疏松症、乳腺癌等病症具有相当的食疗作用。
