测试了木屑代料和段木栽培花菇的可溶性蛋白组分、氨基酸、粗蛋白、粗脂肪、粗纤维、碳水化合物、微量元素、维生素和核酸含量。结果表明,可溶性蛋白在木屑花菇中的含量为6.09%,电泳图谱显示有11条谱带;在段木花菇中含量为5.75%,有10条谱带。氨基酸总量在木屑花菇中为18.56%,其中必需氨基酸占34.16%;而在段木花菇中二者分别为14.51%和32.59%。核酸含量在木屑花菇中为3.92%;在段木花菇中为3.61%。粗纤维在木屑花菇中的含量为13.13%;而在段木花菇中仅为7.82%。粗脂肪、碳水化合物的含量在木屑花菇中分别为1.12%和42.77%;在段木花菇中为4.53%和62.01%。维生素B_1、B_2、尼克酸、麦角甾醇及微量元素铁(Fe)、磷(P)、钙(Ca)、锌(Zn)等在木屑花菇中的含量也均高于段木花菇。
The soluble protein components, amino acids, crude protein, crude fat, crude fiber, carbohydrates, trace elements, vitamins and nucleic acid content of the wood meal substitutes and segment wood-cultivated mushrooms were tested. The results showed that the content of soluble protein in sawdust was 6.09%, the electrophoresis pattern showed 11 bands, the content of 5.75% in Duanmu Mushroom was 10 bands. The total amount of amino acids in sawdust was 18.56%, of which essential amino acids accounted for 34.16%; while in the segment wood mushrooms were 14.51% and 32.59% respectively. The nucleic acid content was 3.92% in the woodchuck mushrooms and 3.61% in the woodchuck mushrooms. The content of crude fiber in the woodchuck mushroom was 13.13%, while in the wood mushroom was only 7.82%. The contents of crude fat and carbohydrate were 1.12% and 42.77% in the woodchuck mushrooms and 4.53% and 62.01% in the wood mushrooms.
