本试验研究了凤尾菇酯酶同工酶和氨基酸含量的变化,结果表明,不管栽培条件、采样部位和生长发育阶段如何,其酯酶同工酶酶谱基本相同,均有稳定的10条酶带,但它们的酶活性有所不同。在菌丝体生长阶段酶活性与生长天数有关。菌丝体生长4—20天时酶活性逐渐增强,尔后有所减弱。而子实体生长阶段从原基形成到菇体萎缩,酶活性则由强变弱。同时氨基酸含量也由高变低。
In this study, the changes of esterase isoenzyme and amino acid content of Pleurotus ostreatus were studied.
