为了鉴别不同年份成品酒和使年份黄酒生产标准化,分别建立了3年、5年、10年陈成品酒的GC-MS指纹图谱。本文采用固相微萃取-气相色谱联用质谱法分析黄酒中的挥发性和半挥发性成分,利用平均值法构建不同年份成品酒的标准指纹图谱。通过与标准图谱相似度的比较分析,发现不同批次生产的黄酒具有较好的相似性,其相似度值都大于0.99,表明用于成品黄酒的鉴别和质量评价方法切实可行。
In order to identify the finished wine in different years and to standardize the production of vintage yellow rice wine, the GC-MS fingerprints of the wine of 3-year-old, 5-year and 10-year-old were respectively established. In this paper, solid-phase microextraction-gas chromatography coupled with mass spectrometry analysis of volatile and semi-volatile components of rice wine, using average method to build the standard fingerprints of finished wine in different years. By comparing with the similarity of the standard map, it was found that the rice wine produced by different batches had good similarity and the similarity values were all greater than 0.99, which indicated that the method of identification and quality evaluation of the finished rice wine was feasible.
