制备了石墨烯修饰玻碳电极(r GO/GCE)并用CV,EIS和SEM对其进行了表征。依据r GO/GCE的电催化活性,利用计时电流法直接测量油脂初级自动氧化过程中由于氢过氧化物产生而引起峰电流的变化。定时取样,分别测量油脂的过氧化值与峰电流,将由过氧化值-时间曲线求得的氧化诱导时间与由氧化峰电流-时间曲线求得的诱导时间进行对比。F检验和t检验结果表明,两种测量方法之间不存在显著性差异。计时电流法较国标法能更为简便、灵敏和准确地分析油脂氧化稳定性。
The graphene modified glassy carbon electrode (r GO / GCE) was prepared and characterized by CV, EIS and SEM. According to the electrocatalytic activity of r GO / GCE, the chronoamperometry was used to directly measure the change of peak current caused by hydroperoxide during the primary auto-oxidation of grease. The samples were taken periodically to measure the peroxide value and the peak current respectively. The oxidation induction time obtained from the peroxide value-time curve was compared with the induction time obtained from the oxidation current-time curve. F-test and t-test showed that there was no significant difference between the two measurement methods. Chronoamperometry than the national standard method can be more simple, sensitive and accurate analysis of the oxidation stability of fat.
