蛋白质(Psoteins)这个名称是Berzelius向Mulder提出来的,并于1838年由Mulder将此名称运用于所有动植物细胞中所发现的复杂的有机含氮物质。“蛋白质”一词起源于希腊文,其意是第一或最重要的意思。事实也是这样,在维持人体生命的七大营养素——蛋白质、脂肪、糖类、无机盐、维生素、水和氧气中——蛋白质是最重要的,是生命的基础。正如恩格斯所说:“生命是蛋白体的存在方式,这种存在方式本质上就在于这些蛋白体的化学组成部份的不断的自我更新”。
The name Psoteins was introduced by Berzelius to Mulder and was applied by Mulder in 1838 to the complex organic nitrogenous species found in all plant and animal cells. The word “protein” originated in Greek, meaning “first” or “most important”. In fact, the seven major nutrients that sustain human life - protein, fats, sugars, inorganic salts, vitamins, water and oxygen - are the proteins that matter most and are the basis of life. As Engels put it, “Life is the way in which the body of the protein exists. The way it exists is essentially the constant self-renewal of the chemical components of these bodies.”
