目的了解绍兴地区食品中铅、镉、总汞、总砷和铬的污染水平,为建立绍兴地区食品中有害元素风险监测体系提供依据。方法采用国家标准检测方法,于2013年对绍兴地区部分食品中铅、镉、总汞、总砷和铬的含量测定,按GB 2762-2012《食品污染物限量》评价检测结果。结果采用国家标准检测方法,于2013年对绍兴地区部分食品中上述5种的含量进行测定,按GB 2762-2012《食品污染物限量》评价检测结果。结论 2013年绍兴地区食品中有害元素整体污染水平不高,但部分食品(蔬菜、甲壳类)污染相对较突出,存在铅、镉、汞超标的样品。
Objective To understand the pollution levels of lead, cadmium, total mercury, total arsenic and chromium in food in Shaoxing, and to provide the basis for establishing the risk monitoring system of harmful elements in food in Shaoxing. Methods The national standard test method was used to determine the contents of lead, cadmium, total mercury, total arsenic and chromium in some foodstuffs in Shaoxing in 2013 and the test results were evaluated according to GB 2762-2012 Food Contaminant Limits. Results The national standard test method was adopted. In 2013, the contents of the above five kinds of foods in some foods in Shaoxing were determined, and the test results were evaluated according to GB 2762-2012 “Food Contaminant Limits”. Conclusion In 2013, the overall pollution levels of harmful elements in food in Shaoxing were not high, but some foodstuffs (vegetables and crustaceans) were relatively polluted, with excessive samples of lead, cadmium and mercury.
