为探究新、陈龙井茶关键香气成分的不同,采用顶空固相微萃取(Head Space-solid Phase Microextraction,HS-SPME)、气相色谱-质谱(Gas Chromatography-mass Spectrometry,GC-MS)、气相色谱-嗅觉测量方法 (Gas Chromatography-olfactometry,GC-O)和香气活性值分析(Odor Activity Value,OAV)系统分析了新、陈龙井茶香气成分的特征与差异。经GC-MS在新龙井茶中鉴定出83种香气成分,在陈龙井茶中鉴定出84种香气成分,其中,反,反-2,4-庚二烯醛、6-甲基-2-庚酮是陈龙井茶特有的成分,己酸甲酯是新龙井茶特有的成分。联合GC-O和OAV在新龙井茶中鉴定出23种香气活性成分,在陈龙井茶中鉴定出26种香气活性成分。其中,β-紫罗兰酮、2-甲基丙醛、2-甲基丁醛、癸醛和己醛对新、陈龙井茶香气贡献较大。结果表明,联合GC-O和OAV不仅能有效地鉴定出新、陈龙井茶关键香气成分的差异,也为鉴别和评价茶叶品质提供了一种可靠的技术手段。
In order to explore the difference of the key aroma components of Xinlong and Chenlongjing tea, the headspace-solid phase microextraction (HS-SPME), gas chromatography-mass spectrometry (GC-MS) GC-O and Odor Activity Value (OAV) systems were used to systematically analyze the characteristics and differences of the aroma components of Xinlong and Chenlongjing tea. 83 kinds of aroma components were identified in Xinlongjing tea by GC-MS, 84 kinds of aroma components were identified in Chenlongjing tea, among them, trans-2,4-heptadienal, 6-methyl- Heptanone is a unique ingredient of Chen Longjing tea, methyl hexanoate is a unique ingredient of the new Longjing tea. In combination with GC-O and OAV, 23 kinds of aroma active ingredients were identified in Xinlongjing tea, and 26 kinds of aroma active ingredients were identified in Chenlongjing tea. Among them, β-ionone, 2-methylpropionaldehyde, 2-methylbutanal, decanal and hexanal had a great contribution to the fragrance of Chenlongjing tea. The results showed that the combination of GC-O and OAV can not only effectively identify the differences of the key aroma components of the new and the Chenlongjing tea, but also provide a reliable technical means for identifying and evaluating the tea quality.
