菇,又称蕈,为菌类植物。人们日常食用的菌类,一般都是高等真菌的子实体,在我国发现的不下350种,人们常见的有蘑菇、草菇、香菇、平菇、猴头菇、金针菇、松口蘑、凤尾菇、竹荪、羊肚菌、牛肝菌等多种。这些食用菌味道鲜美,营养价值高,含有丰富的蛋白质、糖、维生素、矿物质等营养成分;而且不少食用菌对病毒性疾病有免疫或抑制功效,具有良好的调节生理功能作用,对增进身体健康、延缓衰老等都有好处,所以被人们称为是“保健养生食品”。
