目的了解济南市市售食品中以铅、镉、汞、砷为代表的重金属污染现状,为食品安全监管提供依据。方法监测2010-2012年济南市谷物、肉类、水产、蛋类等10类18个品种458份食品,检测食品中铅、镉、总汞、总砷等重金属污染物,按照国家相关标准对检测结果进行分析。结果样品总合格率92.7%,粮食、生禽畜内脏、生乳、蔬菜等食品中存在不同程度重金属超标。结论济南市监测食品中重金属含量合格率较高,今后应加强对粮食、生禽畜内脏、生乳、蔬菜等食品的监测及安全监管。
Objective To understand the status quo of heavy metal pollution in Jinan, including lead, cadmium, mercury and arsenic, and provide basis for food safety regulation. Methods A total of 458 foodstuffs from 18 varieties, including cereals, meat, aquatic products and eggs in Jinan City, from 2010 to 2012, were detected for the detection of heavy metal pollutants such as lead, cadmium, total mercury and total arsenic in foodstuffs. According to relevant national standards, Results were analyzed. Results The total passing rate of samples was 92.7%. There were excessive levels of heavy metals in food, raw meat, offal, raw milk and vegetables. Conclusion The qualified rate of heavy metals in foodstuffs in Jinan City is relatively high. In the future, the monitoring and safety supervision on the food, livelihood, vegetables and other foodstuffs should be strengthened.
