台湾省位于我国东南海面上,西隔台湾海峡与福建省相望。台湾地跨北回归线,属热带、亚热带气候,物产十分丰富。台湾菜用料以海鲜为主,既承袭了闽南菜及其它各菜系的优点,又吸收了日本菜的长处,口味以清淡为主,并多以甜酸汁调味,讲究煲汤进补;同时以“小菜”精制为突出特点——一款“青菜豆腐”也要制造出使人心旷神怡的感觉。追求轻松舒心的氛围,适于家人、朋友小聚以及商务餐会品用,无疑是台湾菜洋溢出的浓厚文化气息。 本期,我们邀请了兆龙饭店青叶餐厅台湾菜厨师长白波教您做六款台湾风味菜,愿您能从中品味出台湾菜肴具有的深厚内涵。
Taiwan Province is located in the southeast of China’s sea, across the Taiwan Strait and Fujian Province. Taiwan stretches across the Tropic of Cancer, which is a tropical and sub-tropical climate with rich natural resources. Taiwanese food mainly seafood, not only inherit the advantages of Taiwanese cuisine and other dishes, but also absorb the strengths of Japanese cuisine, the main taste of light, and more seasoning with sweet and sour sauce, pay attention to soup tonic; at the same time to “ Small dishes ”refined as the salient features - a“ green tofu, ”but also to create people feel relaxed and happy.
