扬州名肴红桥羊肉,盛产于头桥镇双桥弘扬路美食街,该镇是红桥羊肉这种特色佳肴的发源地与主产地。红桥羊肉起源于上世纪60年代,其创史人为当地名厨张有才,后被杨太祥与杨建兵、杨建忠父子三人发扬光大,并经过数十年发展和两代人的艰苦努力,最终一举成名。红桥羊肉以其独特的烹饪方法,使之肥而不腻、鲜而不腥而颇受食客好评,成为扬州主打招牌菜式之一,并荣获“国家金奖”。其中的“全羊席”如今早已成为扬州地方美食
Yangzhou dishes Hongqiao lamb, rich in the first bridge Shuangqiao Hongyang Food Street, the town is the birthplace of Hongqiao lamb and the main origin of such cuisine. Hongqiao mutton originated in the 1960s. Its founder was Zhang Youcai, a local celebrity chef. Afterwards, Yang Taixiang, Yang Jianbing and Yang Jianzhong and his father and son carried forward their ideas. After decades of development and two generations of hard work, they finally became famous. Hongqiao mutton with its unique cooking methods, so fat and not greasy, fresh and not fishy and well received by patrons, become the flagship of Yangzhou one of the dishes, and won the “National Gold Award.” One of the “whole sheep seat” has now become Yangzhou local cuisine
