利用差示量热扫描仪(DSC)测定了不同水分含量的西兰花在-35~40℃温度范围内的表观比热容,其表观比热容随温度、水分不同而变化。采用ORIGIN软件对表观比热容-温度、表观比热容-水分进行曲线拟合,得出西兰花表观比热容的经验计算公式。通过与试验数据比较,经验计算公式具有较高的精度。
The apparent specific heat capacity of broccoli with different moisture content in the range of -35 ~ 40 ℃ was measured by differential scanning calorimetry (DSC), and the apparent specific heat capacity of the broccoli varied with temperature and moisture. ORIGIN software was used to curve fitting apparent specific heat capacity - temperature and apparent specific heat capacity - moisture, and the empirical formula of apparent specific heat capacity of broccoli was obtained. Compared with the experimental data, the empirical formula has high precision.
