食用菌系列保健挂面有:猴头菇挂面、蘑菇挂面、平菇挂面、茯苓挂面、灵芝挂面等,即在挂面中加入一种食用菌成分或多种成分,加工方法大同小异,不同于其它维生素及氨基酸添加剂,其特点是由于菌体粉碎后,多呈散粉末,没有粘性,易裂断,这给挂面加工带来一定困难.我们经过反复实践试制,摸索出“低温、阴干”的特殊工艺,适合多种菌类挂面的加工,现以猴头菇面为例,简介其加工要点.(一)配方及挂面标准富强粉100公斤,猴头菇粉1公斤(或猴头菇汁水20公斤),白茯苓粉0.5公斤,食用精盐1公斤.挂面厚0.8mm,宽1mm,长20cm,含水份14±0.5%.
