It is imperative to study and establish HACCP plan model in general catering industry in our country. 1 Research Methods and Subjects 1.1 Choosing 20 large and medium-sized Chinese food and beverage establishments (with an area of more than 500 square meters) in the urban area as the target, and observing the whole process of procurement, storage, processing, production and supply, and presenting various CCPs
