[目的]调查分析云南省常见野生食用菌中镍含量,为资源的开发利用提供参考。[方法]定点采集云南省常见野生食用菌品种,按GB/T5009.138-2003《食品卫生检验方法理化部分食品中镍的测定方法》石墨炉原子吸收光谱法分析。[结果]36种172件常见新鲜野生食用菌中最高镍含量为3.1mg/kg(黄扫把菌,楚雄),均值为0.18mg/kg,有135件共计78.5%样品的镍含量低于平均水平。[结论]与文献比较,云南省常见野生食用菌的镍含量总体高于蔬菜,与粮食相当,远低于豆类。
[Objective] The research aimed to investigate and analyze the nickel content of common wild edible mushrooms in Yunnan Province and provide reference for the exploitation and utilization of resources. [Method] The common wild edible fungi species in Yunnan Province were collected by spot collection and analyzed by graphite furnace atomic absorption spectrometry according to GB / T5009.138-2003 "Determination of nickel in foodstuffs of foodstuffs by physical examination method. [Result] The highest content of nickel in the total of 36 kinds of 172 fresh wild edible mushrooms was 3.1 mg / kg (yellow broom fungus, Chuxiong) with a mean value of 0.18 mg / kg. The total nickel content of 135 samples with a total of 78.5% was lower than the average level . [Conclusion] Compared with the literatures, the content of nickel in common wild edible mushrooms in Yunnan Province was generally higher than that of vegetables, which was equivalent to grain, much lower than that of beans.
