[目的]确定片烟在厦门的最佳醇化期和使用期。[方法]观察云南和贵州黔南复烤片烟B2F、C3F和X2F在厦门自然醇化过程中香气和口感特性的变化,研究其最佳醇化周期。[结果]香气和口感特性均经历了优化—最佳—恶化3个阶段。香气特性在醇化的第8~16个月普遍达到最佳状态,综合状态在第16个月普遍达到最佳。云南下部烟的最佳醇化期为14个月,其余均为16个月;上部烟的最佳使用期均为醇化的第10~22个月,下部烟均为第6~18个月,云南、贵州中部烟分别为第10~22个月和第6~18个月;贵州下部烟的最大醇化期限不宜超过24个月,可能是受样品单一性的影响,其余均不宜超过36个月。最佳醇化期较之前的研究最长可缩短20个月,最佳使用期前移2~16个月。[结论]该研究为沿海和南方卷烟厂的生产提供了参考。
[Objective] To determine the best tobacco alcohol consumption in Xiamen and the period of use. [Method] The changes of aroma and mouthfeel of B2F, C3F and X2F during the natural alcoholization of Xiamen and Guizhou southern Guizhou cured tobacco were observed, and their optimum alcoholic cycle was studied. [Results] The aroma and mouthfeel properties all experienced three stages of optimization, the best and the deterioration. Aroma characteristics in the first 8 to 16 months of alcohol generally reach the best condition, the comprehensive status in the first 16 months generally achieve the best. Yunnan, the lower part of the best alcohol alcoholation period of 14 months, the rest are 16 months; the best use of upper period of alcohol are the first 10 to 22 months of alcohol, the lower part of the smoke are 6 to 18 months, Yunnan , Guizhou central Guizhou were 10 to 22 months and 6 to 18 months respectively; the maximum alcoholic period of lower tobacco in Guizhou should not exceed 24 months, which may be affected by sample homogeneity, while the others should not exceed 36 months. The optimal alcoholization period can be shortened by 20 months compared with previous studies and the best use period can be shifted by 2-16 months. [Conclusion] This study provides a reference for the production of cigarette factories in coastal and southern China.
