目的建立全自动电位滴定仪测定食品中过氧化值的方法。方法针对不同种类食品提出相对应的前处理方法,优化油脂提取条件,建立不同种食品过氧化值仪器测定最佳参数。结果提取溶剂为石油醚(30~60℃沸程),添加量为石油醚:样品量=3:1(V:V),40℃减压旋蒸去溶剂。建立的自动电位滴定法测定食品中过氧化值结果平行性好,日内精密度(RSD)1.62%~3.81%,日间精密度(RSD)3.21%~6.89%。测定结果与人工目视碘量相比无显著性差异(P>0.05),方法精密度高于碘量法。结论全自动电位滴定方法适用于食品中过氧化值的测定,结果准确度完全满足国标要求,且操作简单,精密度好,适用性强。
Objective To establish an automatic potentiometric titration method for the determination of peroxide value in food. Methods Corresponding pretreatment methods were proposed for different types of food, oil extraction conditions were optimized, and the optimum parameters for determination of peroxide value of different kinds of foodstuffs were established. Results The extraction solvent was petroleum ether (boiling range 30-60 ℃). The amount of added petroleum ether was 3: 1 (V: V). The solvent was evaporated under reduced pressure at 40 ℃. The establishment of automatic potentiometric titration of food peroxide values in parallel results are good, intraday precision (RSD) 1.62% ~ 3.81%, day precision (RSD) 3.21% ~ 6.89%. There was no significant difference between the measured results and artificial visual iodine (P> 0.05), the precision of the method was higher than that of iodine method. Conclusion The automatic potentiometric titration method is suitable for the determination of peroxide value in foodstuffs. The accuracy of the results meets the requirements of the national standard completely. The method is simple in operation, good in precision and strong in applicability.
